Chicken Noodle Soup

Servings: 10 hearty bowls


  • 1 lb chicken thighs
  • 1 box Pad Thai Rice Noodles
  • 1 tbsp olive oil
  • 1 sweet onion, diced
  • 3 carrots, sliced
  • 1 tbsp turmeric
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp fresh ground black pepper
  • Salt to taste

You should have 10 cups of broth total. Please feel free to use store bought broths if necessary.


  1. Cook chicken in a covered pot until tender
  2. While chicken is cooking, saute diced onion until tender in olive oil
  3. When chicken is done cooking, remove the chicken from pot and leave the broth
  4. Add sauteed onions and sliced carrots to pot
  5. Add spices to pot
  6. Bring to boil and reduce heat to a simmer
  7. Simmer for approximately 15 minutes
  8. Shred chicken and add back to pot
  9. Bring it to a boil once more
  10. Add Pad Thai noodles and remove from heat
